The wine estate
The vineyard covers 13 ha on the Côte de Beaune and the Hautes Côtes de Beaune, in the Bourgogne Aligoté, Chardonnay, Pinot Noir, Hautes Côtes de Beaune white and red appellations, Auxey-Duresses (today 5 hectares, i.e. nearly 40% of our area), Pommard, Chassagne-Montrachet and St Aubin 1er cru “les Perrières”.
Our philosophy
A culture of the vine respectful of our soil
Very attentive to the respect of our soil, we set up a culture of the vine which we qualify as relatively classic.
After years of trial and error in organic farming, we decided to take the plunge in 2019 and enter Ecocert certification.
The 2021 vintage will therefore bear the mention « AB ».
Manual work in the vines is essential. During the green work period (May to July), the team more than doubled to around ten people.
Vinification and wine aging
The harvest is done by hand, in small boxes of 12 kg for the reds. The harvest is sorted on a vibrating table and transported to the tanks by gravity, without a pump.
We let the indigenous yeasts do their job and have reduced inputs to the bare minimum of SO2 and chaptalization (when necessary).
The alcoholic and malolactic fermentations of the whites take place in barrels during an aging of 11 to 18 months depending on the vintages and vintages.
The vinification of the red wines takes place in concrete vats and lasts 15 to 20 days, with a part of the entire harvest depending on the vintage.
Then the aging takes place in barrels for 10 to 12 months depending on the vintages and cuvées with 15 to 30% new barrels.
The team
Agnès Paquet
« My family has owned a plot in the Auxey-Duresses appellation since the 1950s.
Since its acquisition, my ancestors let it be rented out to several winegrowers.
When my parents decided to sell it, I decided to run it myself and become a winegrower. »
After studying business, Agnès did not settle for the sale of a plot, family property since the 1950s in the Auxey Duresses appellation, and set out to become a winegrower.
After returning to school and learning on the « job », she developed her estate by acquiring new plots and creating a wine in her name and image.
She divides her time between the vineyard, the cellar and marketing and has been running the business since 2000.
Its first vintage was produced in 2001.
